Sunday and Saturday morning breakfasts usually consist of some sort of waffle or pancake because cheers to the weekend and slow moving mornings.
1/4 cup coconut flour
2 tbs almond flour
2 tablespoons canned coconut milk
3 tablespoons almond milk
1 tablespoon honey- or equivalent amount of preferred sweetener
pinch baking powder and salt
1. Mix all wet ingredients together and whisk for full incorporation. I typically don’t do the whole mixing dry and wet ingredients because it uses two bowls…so I apologize for the laziness and if you prefer you can do the mixing the proper separate way.
2.Heat a pan or griddle to medium heat and grease with coconut oil. Let batter cook for about 2 minutes on each side.
3.Top with coconut flakes, almond butter or chocolate chips. Enjoy!
